Through the process of drawing, the most elegant wines, white or rosé,
undergo a second fermentation in the bottle and at constant temperature in the cellar for a period
of nine months to five years. The deposit formed gathers in the bottleneck on the rack,
making it easy to remove when the corks are changed.
It is at this moment that a dosage is added, determining the final taste of the cava,
making it either sweeter or drier.
